Super Bowl LIX: Celebrate game day with a Philly favorite

Fans of football and food, the wait is over. Super Bowl LIX is this Sunday, and I hope Pennsylvania fans will be cheering on the Philadelphia Eagles playing against the Kansas City Chiefs for the win. The big game is a great reason to party, so bring on the Philly favorites. The Eagles and cheesesteaks.

Honestly, I never met a cheesesteak sub I didn’t love. Thin sliced beef steak, grilled onions, red and green bell peppers, gooey cheese, mayo, oil, lettuce and tomato piled high on a fresh hoagie roll. Oh yes, sauteed mushrooms are also good.

But the deliciousness doesn’t stop there. Top a pizza crust with a little pizza sauce, then spread with Basic Cheesesteak filling, sprinkle on cheese and bake. Or, stuff egg roll wrappers with the steak mixture and deep-fry till golden brown and crispy. Serve with cheese sauce, ranch dressing or a mayo/ketchup combination for dipping.

And speaking of dipping, baked Cheesesteak Dip, served with crusty Italian or French bread, is also a contender.

Basic Cheesesteak Recipe

11/2 T. butter, olive oil or vegetable oil

1 green and red bell pepper, thinly sliced or chopped

1 small onion, thinly sliced or chopped

1-pound boneless rib eye steak, sliced, shaved or coarsely chopped or prepackaged sandwich steaks

Salt and pepper, to taste

6 to 7 slices provolone or American cheese

Directions: In skillet, over medium-high heat, heat butter or oil. Add bell pepper and onion to pan and saute until softened, about 4 minutes. Remove vegetables, cover and keep warm.

Add prepared steak to the pan and saute till cooked. Add the vegetables back to the pan. Season with salt and pepper. Lay cheese slices over and cover pan, heating till cheese is melted.

Cheesesteak Egg Rolls

1 recipe basic cheesesteak, cooled

12 egg roll wrappers

Oil for frying

Ranch or cheese dip for dipping

Directions: Lay out egg roll wrappers on flat surface. Spoon 2 to 3 tablespoons filling onto each wrapper and fold according to package directions, using water to seal edges.

Pour about 3 inches oil into deep pan. Heat oil to 350-degrees F. Fry egg rolls in batches of 3 or 4 at a time, turning occasionally, till completely browned, 3 to 5 minutes. Drain on paper towels. Serve with dipping sauce, if desired. Makes 12.

Cheesesteak Dip

1 1/2 cups chopped, cooked minute steaks

2 T. olive oil

4 ounces sliced fresh mushrooms

1 cup diced onion

1 cup diced green pepper

8 ounces cream cheese, softened

1/3 cup mayonnaise

4 ounces shredded provolone cheese, plus some for the top

Crusty Italian or French hoagie rolls, sliced

Direction: In medium skillet, saute mushrooms in a little butter till tender. Remove from skillet and set aside. In same skillet saute onion and green pepper in olive oil till almost tender. Add steak to pan and saute till steak is browned.

In medium bowl combine cream cheese, mayonnaise and provolone. Add steak, mushrooms and onion mixture. Stir to combine. Turn into an 8 or 9-inch round or square baking dish. Sprinkle with remaining cheese. Bake in 350-degree F. oven 20 to 25 minutes or till cheese is melted and lightly browned. Serve with a small spatula for spreading the dip on the bread.
