If your tastebuds are set on an outdoor barbecue but the weather just won't co-operate, don't fret. Rain is no reason to cancel plans when there are many barbecue-inspired recipes that can be cooked in your oven.
Craving chicken on the grill? How about oven-baked slider sandwiches made with shredded chicken breast, pineapple, jalapenos, barbecue sauce and cheese, drizzled in a buttery honey sauce? Yum.
Ribs, slathered in barbecue sauce, my favorite, come out of the oven fall-off-the-bone tender. You won't miss the grill-charred flavor with the addition of a little liquid smoke in the delicious homemade sauce.
And do try the Cheeseburger Pie. This tasty dish has all the components of a messy burger, minus the lettuce, and is easier to eat.

Sweet-Spicy Barbecued
Chicken Sliders
12 (3-inch) slider sandwich rolls, split
2 1/2 cups shredded cooked chicken breast
1 cup chopped fresh or canned pineapple, well drained
2/3 cup barbecue sauce
1/4 cup chopped pickled jalapeno peppers
1 1/2 cups shredded Monterey Jack cheese
6 T. melted butter
1 T. Worcestershire sauce
2 T. honey
1/2 tsp. black pepper
Directions: Arrange bottoms of rolls in 13×9-inch baking pan. In bowl combine the next four ingredients through jalapenos. Spoon onto roll bottoms. Top with cheese. Cover with roll tops.
In bowl combine butter, honey, Worcestershire sauce and pepper. Drizzle evenly over rolls. Cover baking pan with foil. Bake in preheated 350-degree F. oven 15 minutes. Uncover; bake 10 to 15 minutes more, or till cheese is melted and roll tops are lightly browned. Serves 12.
Smoky Oven Ribs
4-pounds spareribs
Sauce:
1 1/2 cups catsup
1/4 cup packed brown sugar
1/4 cup molasses
1/8 cup yellow mustard
1 T. vinegar
1 1/2 tsps. liquid smoke, or more to taste
1 T. Worcestershire sauce
1 tsp. hot sauce, optional
Directions: In saucepan, combine sauce ingredients; bring to boil. Remove from heat and set aside.
Cut ribs into serving-size pieces. Place meaty side down in large shallow pan. Bake, uncovered, in preheated 450-degree F. oven 30 minutes. Drain off excess fat.
Reduce heat to 350-degrees F. Turn ribs over and bake another 50 to 60 minutes. Brush ribs with sauce during last 30 minutes of cooking. Serves 4 to 6.
Cheeseburger Pie
1-pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 tomato, sliced
1/2 tsp. garlic salt
1 tsp. black pepper
1 tsp. dried oregano
1 cup shredded Cheddar cheese
1/2 cup buttermilk baking mix
1 cup milk
2 eggs
Directions: Grease a deep dish10-inch pie plate. In large skillet over medium heat, brown ground beef, onion and garlic. Drain off fat. Spread into prepared pie plate. Sprinkle meat with salt, pepper and oregano. Arrange tomato slices over meat and top with cheese.
In small bowl, mix together baking mix, milk and eggs. Pour batter over cheese. Bake in preheated 400-degree F. oven 25 minutes, or till knife inserted in center comes out clean. Cool about 5 minutes before serving. Serves 6 to 8.
