Fruit hot off the grill

When having a barbecue and you want to serve dessert but don't want to heat up the kitchen by turning on the oven to make it, there is an easy solution.

Grill some fresh fruit instead.

It only takes a few minutes and is a delicious finale.

Pineapple

with Lime Dip

1 fresh pineapple

1/4 cup packed brownsugar

3 T. honey

2 T. lime juice

Lime Dip:

3-ounce package cream cheese, softened

1/4 cup plain yogurt

2 T. honey

1 T. brown sugar

1 T. lime juice

1 tsp. grated lime peel

Directions: Peel and core the pineapple; cut into eight wedges. Cut each wedge into two spears. In large resealable plastic bag, combine the brown sugar, honey and lime juice; add pineapple. Seal bag and turn to coat. Refrigerate 1 hour.

In small bowl, beat cream cheese till smooth. Beat in yogurt, honey, brown sugar, lime juice and lime zest. Cover and refrigerate till serving.

Coat grill rack with oil or cooking spray before starting grill. Drain and discard marinade. Grill pineapple, covered, over medium heat for 3 to 4 minutes on each side or till golden brown. Serve with lime dip. Serves 8.

Peaches with Lemon Cream

1/4 cup heavy whipping cream

1T. brown sugar

1 tsp. vanilla extract

1/2 tsp. grated lemon peel

3 medium fresh peaches, halved

2 T. cooking oil

Directions: In small bowl, beat cream till it begins to thicken. Add brown sugar, vanilla and lemon peel. Beat till stiff peaks form. Cover and refrigerate until serving.

Brush cut sides of peaches with oil. Place cut side down on grill rack. Grill, covered, over medium heat, 10 to 12 minutes or till peaches are tender and begin to caramelize. Place peaches on dessert plates and fill with lemon cream. Serves 6.

Honey-Rum Grilled Bananas

2 T. rum

2 T. honey

1 tsp. ground cinnamon

4 medium firm unpeeled bananas

Vanilla ice cream

Directions: In small bowl, combine rum, honey and cinnamon; set aside. Cut bananas in half lengthwise, leaving peel on.

Place bananas cut side down on grill. Cover and grill over medium heat 3 minutes. Turn and brush with honey mixture. Cover and grill 5 to 6 minutes longer or until tender. Serve immediately with ice cream. Serves 4.
