Classic cookies from a cake mix

I always start the holiday season with ambitious goals, forgetting how fast time flies. So, in order to get as much done as possible, I don't have a problem taking a few shortcuts. All those homemade cookies I plan to bake, I will bake them, but with the help of a cake mix for some.

It's amazing the yummy cookies you can make with a simple cake mix and a few other ingredients. Classic cookies like a fudgy white chocolate chip version, with walnuts or without, chewy peanut butter cookies with toffee bits in the cookie and on top and delicious cookie balls with a surprise chocolate kiss hiding inside. Joyfully, they go together quickly, with less mess, and come from the oven looking, and tasting, perfectly homemade.

Quick Chocolate Softies

1 package devil's food cake mix

1/3 cup water

1/4 cup butter, softened

1 large egg

1 cup white chocolate chips

1/2 cup coarsely chopped walnuts, if desired

Directions: Preheat oven to 350-degrees F. Line cookie sheets with parchment paper.

Beat cake mix, water, butter and egg in large bowl of electric mixer at low speed till moistened. Beat at medium speed 1 minute (dough will be stiff.) Stir in white chips and nuts till well blended. Drop dough by heaping teaspoonfuls 2-inches apart onto prepared cookie sheets.

Bake 10 to 12 minutes or till set. Cool on cookie sheets 1 minute; remove to wire racks to cool completely. Makes about 4 dozen cookies.

Peanut Butter Toffee Chewies

1 (18-ounce) yellow cake mix with pudding in mix

1 cup peanut butter

1/2 stick butter

1/4 cup water

1 large egg

1 1/3 cup toffee baking bits, divided

Directions: Preheat oven to 350-degrees F. Line baking sheets with parchment paper.

In mixing bowl of electric mixer, beat cake mix, peanut butter, butter, water and egg on medium speed till well blended. Stir in 1 cup toffee bits.

Drop dough by rounded teaspoonfuls 1/12-inches apart onto prepared cookie sheets. Flatten tops of cookies slightly with the back of a teaspoon. Sprinkle about 1/4 teaspoon remaining toffee bits into centers of each cookie.

Bake 10 to 12 minutes or till edges are lightly browned. Cool on cookie sheets 5 minutes. Remove to wire racks; cool completely. Makes about 4 dozen cookies.

Chocolate Surprise Cookies

1(18-ounce) package yellow cake mix with pudding in mix

1 stick butter

1 large egg yolk

1 cup ground pecans

36 milk chocolate kiss candy, unwrapped

Powdered sugar, for dusting

Directions: Preheat oven to 300-degrees F. Beat half of cake mix and the butter with electric mixer on high speed until blended. Add egg yolk and remaining cake mix; beat at medium speed just until dough forms. Stir in pecans.

Shape rounded tablespoonfuls around each kiss, making sure candy is completely covered. Place 1-inch apart on ungreased cookie sheets.

Bake 20 to 25 minutes or until firm and golden brown. Cool on cookie sheets 10 minutes.

Place waxed paper under wire racks. Remove cookies to racks; dust with powdered sugar. Makes 2 dozen cookies.
